Coming Up Roses: Dining in Colchester Continues to Impress

Colchester is affirming its place as the culinary capital of Essex with yet another AA Rosette to its name.

Less than six months since its launch, the Crowne Plaza Resort Colchester – Five Lakes has been awarded its first AA Rosette for its Brasserie 1 restaurant. Headed up by former chef to The Royal Household, the kitchen team impressed inspectors with its “precision in cooking and obvious attention to the selection of quality ingredients”.
James Parsons, executive head chef, said: "This award is a real testament to the quality and skill of the Brassiere 1 team – to make such an impression is such a short timeframe is a real achievement. However, our ambition will not stop here. Over the next year we will be raising our game even further with the aim of adding more awards to this, not only for Brasserie 1 but also our fine dining seafood restaurant, Catch 22.
Brasserie 1 is a light and airy restaurant with an informal and relaxed atmosphere. The European menu comprises a wide range of dishes with a distinctively British twist. Classic favourites include 21 day dry aged steaks and bitter chocolate fondant, while the range of signature dishes from James Parsons boasts seabass fillet and 12 day braised blade of beef. From this March, a range of seafood specials will be introduced to the menu, featuring locally sourced fish and fine champagne.
Ben Danielsen, general manager of the Resort, added: "We are delighted to have received this prestigious award so soon after opening. We had always targeted an award of this kind for Brasserie 1, but didn't expect to receive such praise so quickly after opening last year. Our appointment of James Parsons as executive head chef was a crucial element in winning the award. He brings a tremendous pedigree and great experience gained from cooking for The Royal Household to food at Brasserie 1 and it really shows in the quality of our food."
